Chocolate Chocolate Chip Pancakes


  • 5 cups pancake batter
  • 2 Tbsp cocoa powder
  • 1/2 cup sugar
  • 1 cup oats
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips


  1. Make pancake batter from a box, bag, or from scratch using whatever method your family prefers.   
  2. Combine sugar and cocoa powder. 
  3. Add oats and sugar mix into the batter, then stir.  At this point check the consistency of your batter.  If it is too thin, add more flour/mix.  If it is too thick, add a little water.   
  4. Add vanilla and chocolate chips at the end, stir.  
  5. Heat griddle to 300.
  6. Pour batter onto heated griddle and cook until bubbles appear. Flip and repeat.

Lentil Curry Soup

Lentil Curry Soup

1lb orange lentils
6-8 cups hot water
2 Tbsp chicken bouillon
1 Tbsp curry powder
8oz diced summer sausage
12oz frozen peas and carrots

Rinse lentils in cold water before cooking.   No soaking needed. 

Add lentils to hot/boiling water and simmer on medium to low for 10 minutes, stirring frequently. 

Add seasonings and sausage.  Continue cooking until lentils reach desired tenderness. 

Add frozen veggies and stir.  Remove from heat and let soup heat the veggies through.

This soup goes great with naan or any type of crackers.
